1 Large Chuck Roast

2 tbsp oil

salt

pepper

garlic powder

1 sweet onion

6 large carrots sliced

8-10 small red potatoes

water

Season meat well with salt, pepper and garlic powder. Add oil to deep pot on stovetop. Over high heat, brown meat. Lower heat, cover meat with water, bring to a high simmer. Cook two hours, refilling water to keep meat covered. Add onion. Cook one hour. Add carrots and potatoes, generously salt and pepper and more water to cover meat and vegetables. Cook one hour.

Serve and enjoy!
